Grilled Mediterranean Marinated Chicken with Herby Cottage Cheese Sauce
Ingredients
For marinade
- 4 chicken breasts
- 3/4 cup Kemps cottage cheese
- 3/4 cup yogurt
- 1/2 cup olive oil
- 2 cloves garlic
- 2 tablespoons red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon salt
For sauce
- 1/4 cup Kemps cottage cheese
- 3 tablespoons Kemps milk
- 2 ounces feta cheese
- 1 small clove garlic
- Juice of 1 lemon
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
To serve
- Lemon wedges
How to
With a sharp knife parallel to the cutting board, butterfly each chicken breast, cutting all the way through to create 2 thin pieces per chicken breast. Place chicken in baking dish.
Prepare marinade by blending marinade ingredients together in a food processor or blender. Pour over chicken breasts and stir to coat evenly. Cover chicken and refrigerate overnight.
To cook chicken, preheat grill to 400 degrees Fahrenheit. Wipe excess marinade from chicken breasts and place on grill. Let cook 4-5 minutes, then flip and cook another 2-3 minutes or until a thermometer placed in the chicken reads 160 degrees. Remove chicken from grill and let rest 5 minutes while you prepare the sauce.
Blend all sauce ingredients together in a food processor. Serve with grilled chicken and a lemon wedge.
