Mini Stuffed Waffles with Whipped Cottage Cheese and Pepper Jelly
Ingredients
1 boxed waffle mix, plus required ingredients to make them
1 cup Kemps cottage cheese
1 tablespoon butter
1/4 cup hot pepper jelly
Maple syrup to serve
How to
Mix up enough batter for 8 mini waffles, according to package instructions. Using a mini waffle iron, prepare waffles, cooking until light golden brown. Meanwhile, in a mini food processor or small blender, blend cottage cheese until smooth.
In a large nonstick skillet over medium heat, melt butter. Place 4 waffles in the pan and top each with a spoonful of whipped cottage cheese and a smaller spoonful of pepper jelly. Spread filling around to evenly cover waffle, then top with another waffle. Cook until bottom waffle is golden brown. Using a wide spatula, carefully flip waffles and cook for another 2-3 minutes until golden brown, then serve with maple syrup.
