Frozen Cottage Cheese Bark – 2 Ways

Strawberry Frozen Cottage Cheese Bark
- 2 cups Kemps cottage cheese
- 3 tablespoons honey, plus more for drizzling
- 1/2 cup sliced strawberries
- 1/2 cup granola
Chocolate Peanut Butter Frozen Cottage Cheese Bark
- 2 cups Kemps cottage cheese
- 1 banana
- 3 tablespoons honey
- 1/3 cup chocolate chips
- 1/3 cup peanut butter
- 1/4 cup crushed peanuts
How to
Strawberry Frozen Cottage Cheese Bark
In a food processor or blender, pulse cottage cheese and 3 tablespoons honey until smooth. Spread cottage cheese mixture onto a parchment-lined baking sheet, about ¼” thick. Layer strawberries over top, sprinkle with granola, and drizzle with more honey. Freeze for several hours until solid, then break into pieces to serve.
Chocolate Peanut Butter Frozen Cottage Cheese Bark
In a food processor or blender, pulse cottage cheese, banana, and honey until smooth.
Melt chocolate chips in the microwave in 10 second increments, stirring in between, until smooth. Repeat with peanut butter.
Spread cottage cheese mixture onto a parchment-lined baking sheet, about ¼” thick. Drizzle peanut butter and chocolate over top and use the tip of a knife or chopstick to swirl together. Sprinkle peanuts over top. Freeze for several hours until solid, then break into pieces to serve.
