Cheesy Taco Dip
Ingredients
4 cups Kemps cottage cheese
2 1/2 cups shredded cheddar cheese, divided
1 1/2 teaspoon salt, divided
1 packet taco seasoning, divided
1/2 pound ground beef
To serve:
Diced tomatoes
Chopped cilantro
Sliced jalapeños
Tortilla chips
How to
Preheat oven to 400 degrees Fahrenheit.
In a blender or food processor, pulse cottage cheese, 2 cups of the cheddar cheese, 1/2 teaspoon salt, and half of the taco seasoning until mostly smooth; don’t over mix. Pour into 9 x 9” baking dish and bake for 20-30 minutes, until hot and bubbling.
While queso is baking, cook ground beef in a skillet on the stove over medium-high heat. Toward the end of cooking, add remaining 1 teaspoon salt, second half of taco seasoning packet, and 2 tablespoons water. Stir and let cook another minute, then remove from heat.
Remove queso from oven and spoon seasoned meat over queso, along with remaining 1/2 cup cheddar cheese. Bake another 4-5 minutes until cheese on top is melted. Remove from oven and top with tomatoes, cilantro, and jalapeño. Serve with tortilla chips.
