Cottage Cheese Bacon Jalapeño Popper Dip

Ingredients
- 8 oz cream cheese, softened
- 2 cups Kemps® cottage cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 8 strips bacon, cooked and chopped
- 3 jalapeños, 2 finely diced and 1 thinly sliced (remove ribs and seeds for less heat)
- 1 cup shredded cheddar cheese, divided
- 1 cup shredded mozzarella cheese
- 1/4 cup panko breadcrumbs
- 2 tablespoon chopped chives for garnish
- Tortilla chips or crackers to serve
How to
- Preheat oven to 375 degrees
- Spray an 8-inch baking dish or cake tin with baking spray
- In a large bowl, mix together cream cheese, cottage cheese, and spices until well combined
- Fold in bacon, diced jalapeños, 1/2 cup cheddar cheese, and mozzarella, then transfer to prepared baking dish
- Top with remaining cheddar cheese, breadcrumbs, and sliced jalapeños and bake for 20-25 minutes, until dip is very hot and breadcrumbs are toasted
- For an extra toasted top, turn oven to broil for the last few minutes of cooking
- Remove dip from oven, sprinkle chives over top, and serve with chips or crackers
