Cottage Cheese Bacon Jalapeño Popper Dip

Ingredients

  • 8 oz cream cheese, softened
  • 2 cups Kemps® cottage cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 8 strips bacon, cooked and chopped
  • 3 jalapeños, 2 finely diced and 1 thinly sliced (remove ribs and seeds for less heat)
  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • 1/4 cup panko breadcrumbs
  • 2 tablespoon chopped chives for garnish
  • Tortilla chips or crackers to serve

How to

  1. Preheat oven to 375 degrees
  2. Spray an 8-inch baking dish or cake tin with baking spray
  3. In a large bowl, mix together cream cheese, cottage cheese, and spices until well combined
  4. Fold in bacon, diced jalapeños, 1/2 cup cheddar cheese, and mozzarella, then transfer to prepared baking dish
  5. Top with remaining cheddar cheese, breadcrumbs, and sliced jalapeños and bake for 20-25 minutes, until dip is very hot and breadcrumbs are toasted
  6. For an extra toasted top, turn oven to broil for the last few minutes of cooking
  7. Remove dip from oven, sprinkle chives over top, and serve with chips or crackers
  8. Enjoy!
