Roasted Sweet Potatoes
3 sweet potatoes
Kemps® Mexican style sour cream
Lime (or lime juice)
Cut sweet potatoes in half, rub with olive oil and salt.
Place in baking pan and seal with aluminum foil.
Roast for 20 minutes at 400 degrees F
Remove foil and finish baking until caramelized and a fork slides through easily.
Mix ½ cup Kemps Mexican style sour cream with 1 tablespoon fresh lime juice and drizzle onto potatoes.
Add a dusting of smoked paprika, salt, and lime zest to taste.
TIP: Add pepitas for a toasty crunch
